Our house COGNAC LEGIER embodies the heritage and tradition of the region.
For generations, we have dedicated ourselves to the creation of exceptional cognacs, fusing ancestral know-how and contemporary innovation.
The wine cellar
Our expertise begins in the wine cellar, where the grapes are sent to pneumatic presses to extract the juice. The grape juice is then sent to fermenting tanks to get wine.
We have 2 types of tanks:
- Stainless steel tanks: Latest acquisitions as part of the expansion of our wine cellar.
- Concrete tanks: These traditional tanks have been modernized and offer optimal winemaking quality.
The work of winemaking is crucial to obtain wines of the best possible quality.
To obtain cognac, the wines require a double distillation in a Charentais still. This is a particularity from Charente, a tradition that we perpetuate with passion.
At the end of the distillation, the wine is transformed into a white brandy (or “eau-de-vie”) intended to age under wood.
The eaux-de-vie cellar
The aging is an indispensable step that requires infinite patience. Every “eau-de-vie” develops at its own pace.
Stored in French oak barrels (from the Tronçais or Limousin Forest), they will age at least 2 years. This step adds to the “eaux-de-vie” depth and complexity of the cognac.
Furthermore, the characteristics of the barrels and cellars have an influence on the eaux-de-vie. For example, the barrels can be new or ancient and therefore will not bring the same notes. The same principle goes for the cellar. It can be more or less humid and you can see, on the walls and roofs of the cellar, a microscopic black mushroom that eats “the angels’ share” (“la part des anges” in French), which is the evaporation. This mushroom is the Baudoinia Compniacencis.
